A simple way to start the day off right. Amidst hectic schedules, allow you and your family to still enjoy a delicious and nutritious breakfast before you hit the road.

Look to use whole grain waffles with at least 3 grams of fiber per serving. Fiber helps to fill you up and fuel your body properly until your next snack or meal. Children, especially, need a hearty breakfast to assist in the concentration at school.

I don't know many people who don't like pizza. Tell your kids your making pizza for breakfast and you may just win parent of the year :-)

Waffle Pizza, 2 servings
2 sheets of whole grain frozen waffles minis
3 Tbsp. non-fat plain Greek yogurt
1 tsp. pure maple syrup
1/4 tsp. vanilla extract
Assorted cut fresh fruit - strawberries, blueberries, raspberries, kiwi, pineapple, etc.

Toast frozen waffles according to directions. In a small bowl, whisk together Greek yogurt, maple syrup and vanilla. When waffles are lightly toasted remove from toaster, allow time to cool, and then spread yogurt mixture on each waffle. Top with your assorted fresh cut fruit.

To keep the cost budget friendly - shop for fruits on sale and in-season.

Be Well,

Kristin
