Fall is quickly approaching and thus the rise of the sweet potato on our menus. Homemade sweet potato fries require minimal ingredients and seem easy, however, if you have attempted before you may have ended frustrated with a mushy product.  What was missing? A secret ingredient!

Crispy Sweet Potato Fries4 servings
1 large sweet potato 
2 Tbsp. cornstarch
3 Tbsp. olive oil
1/2 tsp. salt

Preheat oven to 400 degrees. Peel and cut potato into 1/4 inch sticks. Place potatoes in a bowl. Add cornstarch and salt. Toss to coat. Add oil. Toss again. Transfer to a baking sheet (be sure not to overcrowd or overlap potatoes). Roast for 15 minutes; flip and repeat on other side. 

Season however you desire - salt & pepper, cinnamon & sugar, garlic powder or with your favorite hot sauce.
