Easy, homemade strawberry fruit leather, requiring only a few simple ingredients and an oven. Tastes just like your favorite fruit roll-up, only better!

Since we are headed back to school, I figured this would be the perfect time to share an easy, delicious and nutritious snack. Growing up I definitely devoured my fair share of fruit roll-ups, however, many premade ones add in extra ingredients and a ton of added sugars making it more of a treat that a snack. You don't need a dehydrator, just a few basic kitchen ingredients and you will have a snack that is a hit with your kids.

Strawberry Raspberry Fruit Leathers, 6 servings
8 ounces strawberries
5 ounces raspberries
1 Tbsp. lemon zest
3 mint leaves
1 tsp. honey

Preheat oven to 200 degrees F. Line a baking sheet with a silicone mat. Add all ingredients into a blender. Blend until pureed. Pour onto your silicone mat. Spread evenly using a spatula. Be sure to leave a one-inch perimeter for easy clean up. Bake for 1 1/2 hours.

Turn the temperature down to 150 degrees. Bake for an additional 1 1/2 hours. Remove and allow to cool.

To prevent sticking: cut parchment paper into 6 strips about 2 inches wide. Cut 6 stripes of fruit leather. Place leather on parchment strips and roll.
