We love a good prepared breakfast option for busy mornings...or for when hosting holiday guests. No one wants to have to wake up extra early to get breakfast on the table - am I right?! The beauty of this recipe - mix and match whatever you want! I love the classic strawberries and bananas, however, add any fruit you want, nuts, raisins, etc. 

Strawberry Banana Oatmeal Bake4-6 servings
2 Tbsp. coconut oil, melted
1 egg
3 cups milk
1/4 cup maple syrup
2 tsp. vanilla extract
1 tsp. ground cinnamon
1 tsp. baking powder
1/4 tsp. salt.
2 cups old fashioned oats
6 oz. strawberries, sliced
1 banana

Lightly oil a 8x8 baking dish. In a large bowl, mix together melted coconut oil, egg, milk, maple syrup, vanilla, cinnamon, baking powder, and salt. Stir in oats and strawberries. Store in the refrigerator covered overnight, if waiting until tomorrow to enjoy. Preheat oven to 350 degrees. Bake for 45 minutes or until the center is set. Top with sliced bananas halfway through the baking process. Serve warm.
