Pumpkin French Toast Sticks, serves 4
4 slices whole grain bread
2 large eggs
1/4 cup low-fat milk
1/4 cup pumpkin puree
1/2 tsp. pumpkin pie spice
1/2 tsp. vanilla extract.
Preheat oven to 375 degree. Line a baking sheet with parchment paper.
Cut each slice of bread into sticks.
Crack eggs into a large bowl. Whisk in milk, pumpkin puree, pumpkin pie spice and vanilla extract until well combined.
Working in batches, dip bread sticks into egg mixture then place the dipped bread on the prepared baking sheet. Repeat with remaining bread.
Bake 15 minutes, or until slightly browned. Serve with maple syrup, yogurt, berries, etc.
