Peach Salsa, 8 servings
1 lb. tomatoes, diced
1 ½ lbs. peaches, diced
1 green bell pepper, seeded and diced
2 jalapenos, seeded and diced
1 medium onion, diced
½ bunch cilantro, chopped
1 lime, juiced
salt and pepper, to taste

Mix diced tomatoes, peach, bell pepper, jalapeno, and onion in a bowl. Toss to combine. Add chopped cilantro, lime juice, salt and pepper. Mix until well incorporated. Serve over grilled fish for a meal made easy, or with Martin’s tortilla chips for a quick appetizer.
