Parmesan and Tomato Baked Cod4 servings
1-1/2 lb fresh cod fillets, prepared
1 Tbsp. butter
1/2 lemon, juiced
2 roma tomatoes, sliced
2 Tbsp. grated parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika

  1. Preheat oven to 425. Lay fish on a greased baking sheet. Salt and pepper the fish.
  2. Melt butter and drizzle over the top of the fish. Repeat with the lemon juice. 
  3. Arrange tomato slices over top. Sprinkle fish with parmesan cheese.
  4. Sprinkle with paprika. Bake the fish, uncovered, for 12 to 15 minutes.
