Creamy Cucumber Dill Sandwiches, 8 servings
2 slices white bread*
2 slices whole-wheat bread*
8 - 1/4 inch slices of cucumber, washed
6 Tbsp. cream cheese
2 Tbsp. mayo
sprinkle of smoked paprika
fresh dill weed
*or bread of choice
Mix together cream cheese, mayo, paprika and dill weed in a small bowl. Smooth a thin layer onto all slices of bread, Place 4 slices of cucumber onto both white slices of bread. Top each white slice with a slice of whole-wheat slice of bread, cream cheese mixture side down. Cut off all 4 edges of crust. Cut diagonal once then turn and cut diagonal again. After you do both you will have 8 triangle shaped sandwiches.
Try pairing this simple spread on tortillas with turkey or even as a dip with your favorite vegetables.
