The holiday season is once again upon us.  With many invitations to get-togethers and the standard fare of appetizers and dips for you to choose from to deliver to your hosts (or maybe you are the host!).  It seems that you can predict with near accuracy the appetizers that will be served.  That’s not to say that they are not delicious; we look forward to many of them ourselves.  What if I told you that we can offer you a dish that is unpredictable AND delicious?  One that can intrigue and delight at the same time.  Here it is!

Ingredients
  • 1/2 cup butter
  • 1 4oz. jar diced pimento, drained
  • 1 bunch green onions, sliced
  • 2 tsp. Creole seasoning
  • 1 small green bell pepper, diced
  • 1 8oz. package cream cheese
  • 1lb. packaged frozen cooked, peeled
  • French bread baguette slices
  • crawfish tails, thawed and undrained
  • 2 garlic cloves, minced                                                          
Method

Melt butter in a Dutch oven over medium heat. Add green onions and bell pepper.  Cook, stirring occasionally, 8 minutes or until bell pepper is tender.  

Stir in crawfish and the next three ingredients.  Cook, stirring occasionally, for 10 minutes.  Reduce heat to low.  

Stir in cream cheese until mixture is smooth and bubbly.  Serve with toasted French bread slices.

This appetizer heats up nicely if you need to transport it. 

We paired this with a lovely Segura Viudas Rose sparkling wine.  It has well balanced fruitiness while being refreshingly crisp with gentle aromas.  Whatever your appetizer selection, have fun and enjoy the holidays!
