One of our family's favorite fish recipes is Grilled Swordfish.  There is only one species of swordfish, so this makes it very easy to select when purchasing, You do not have to be an expert! Swordfish has many nutritional benefits. Each three ounce portion only has 146 calories, no carbohydrates and 20 grams of protein.  It is also high in omega 3’s and potassium to help keep your heart healthy.  Swordfish is one of the few natural food sources of vitamin D.  Swordfish is a great fish for grilling as it holds up well on the grill while remaining moist and tender, it is also wonderful under the broiler.

For this recipe you will need:

 

1 tbsp ground cumin
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1/4 tsp chipotle chili powder
2 tbsp olive oil
four 6 to 8 oz Swordfish steaks (or one large one to carve as we have prepared)
2 tbsp finely chopped cilantro (or dried if not available)
1 lime
 

Method:

Begin by getting your grill going or preheat your broiler. You will want to use a medium-high heat.  Combine the cumin, salt, pepper and chipotle powder in a small bowl and blend well.

Generously sprinkle the seasoning mixture over the steaks, gently pressing the seasonings into the fish.  Repeat on the opposite side, then loosely cover the steaks and set aside in the refrigerator for at least 20 minutes.

Pour oil onto a plate.  Dip each steak in the olive oil and grill (or broil) 4 to 5 minutes per inch of thickness per side.  Transfer to a platter and garnish with the cilantro and lime wedges.

We find this dish pairs well with grilled vegetables and a mixed rice.  This is truly a meal that tastes decadent and at the same time is very nutritionally beneficial.
