St. Patrick's Day is one of the world's favorite holidays. Whether you come from Irish heritage or just really love corned beef and cabbage, celebrating the iconic holiday is always fun. However, the nation is changing its attitude toward health; if you're interested in green gaiety, include some natural foods while dancing that jig. Here are two St. Paddy's Day recipes that even the pickiest of leprechauns can enjoy.
Mint Chocolate Green Smoothie
Everybody loves chocolate, but this is St. Patrick's Day -- if it isn't green, you're doing something wrong! This protein-packed smoothie is full of nutrients, but tastes like a mint chocolate milkshake.
- 1/4 Cup Avocado, mashed
- 1/4 Cup 2% Vanilla Greek Yogurt
- 1/4 Cup Vanilla Protein Powder
- 1/4 tsp Peppermint Extract
- 3/4 Cup Unsweetened Vanilla Almond Milk
- 1/2 Cup Kale, firmly packed
- 1/2 Cup Ice
- 1 Tbsp Mini Chocolate Chips
Place all the ingredients except for the chocolate chips in your blender or smoothie machine, and set it to "Smooth." When your shake is nearly fully blended, add in the chocolate chips and blend for desired consistency. Then, enjoy!
Cucumber Avocado Salad
We love an easy recipe, and this one certainly keeps the green theme going. Plus, this recipe is as healthy as it is refreshing.
- 3 Large Avocados
- 2 Large Cucumbers
- 1/4 Cup Apple Cider Vinegar
- Dash of Salt and Pepper
Cut the avocados in quarters lengthwise and pit them. Score them into dices and scoop them out into a medium bowl. Peel and dice your cucumbers, and add them to the bowl as well. Toss your ingredients with apple cider vinegar, and add the salt and pepper to taste. There you have it; a three-ingredient recipe that can be made in less than five minutes.
There's no doubt that Americans are going organic; it's estimated that they spent $45 billion on organic food sales in 2017.
