Ginger Wasabi Chex Crusted Salmon2 servings
2 6 oz. salmon fillets, skin on
1 Tbsp. rice vinegar
1/2 Tbsp. tamari (or soy sauce)
1 tsp. maple syrup
1 tsp. freshly grated ginger
1/2 cup Rice Chex cereal
1 tsp. wasabi powder
1 tsp. olive oil
1/4 tsp. sea salt

Preheat oven to 400 degrees. Make marinade by combining rice vinegar, tamari, maple syrup and grated ginger in a small bowl. Place salmon skin side down in a shallow baking dish and coat with ginger marinade. Cover and let marinate in the fridge for about 10 minutes.

Meanwhile, place Chex cereal in a small plastic bag and use your hands to crush the cereal pieces. Once crushed, add wasabi powder and sea salt and shake to combine. 

Add oil to the bag and shake to combine everything once more.

After salmon has marinated, remove from fridge and press the wasabi cereal mixture thickly on top of both pieces of salmon, making sure to cover the whole piece. Place the baking pan in the oven and bake for about 15 minutes or until salmon is cooked through. 

Plate salmon and serve with veggies or a small salad.
