With the top section of a pineapple being referred to as a "crown," the pineapple has quite the regal air. Pineapples have exceptional juiciness and a vibrant tropical flavor that balances the tastes of sweet and tart. They are second only to bananas as America's favorite tropical fruit. They are an excellent source of vitamin C, which helps support healthy immune systems, and manganese, which supports energy metabolism.  

Store fresh pineapple in the refrigerator for 2-4 days. Once cut, the pineapple will last a couple of days if placed in a tightly covered container and store in the refrigerator. Select pineapples with a strong aroma that are fresh looking. Pineapples are picked when ripe and do not ripen aftern harvest. 

Use your fresh Dole pineapple and make these Fish Tacos for your Cinco de Mayo celebration!

Dole's Fresh Fish Tacos, 4 servings
1 tsp. olive oil
3/4 lb. white fish fillets such as cod or flounder
1/2 tsp. salt
1/4 tsp. ground black pepper
8 flour tortillas (8-inch)
1 avocado, chopped
1/2 cup Red Cabbage, shredded
1 cup DOLE Pineapple, cut in 1/2 inch pieces (or used Dole Canned Pineapple, in 100% juice)
1/2 cup (optional) prepared salsa
Heat the olive oil in a nonstick skillet over medium-high. Add the fish fillet, skin-side down, and season with salt and pepper. Cook for 5 to 7 minutes, turning fish half-way through cooking time, until it flakes easily with a fork. Remove skin and divide salmon into 8 pieces.

Meanwhile, warm tacos according to package instructions. Place a piece of salmon in each taco and top with equal portions avocado, cabbage and pineapple. Serve with a tablespoon of salsa on top, if desired.

To cut a pineapple:
Twist off crown. Cut pineapple in half and then into quarters. Trim off ends and remove core from center of quarter. Using a thin paring knife remove shell from fruit. Cut into bite-size pieces. For pineapple "boats" leave on the crown and both ends on the pineapple. Cut the pineapple in half lengthwise. Use a thin paring knife to cut the fruit out of the boats. The boats can be filled with fruit salad, sorbet, or even a chicken stir-fry.
