Bite-sized and delicious, these low-carbohydrate cauliflower tots may be your new favorite recipe for the New Year. Delicious with all the crispyness and flavor you are desiring. To make them gluten free, just substitute in gluten free breadcrumbs!

Cauliflower Tots,
6 servings
3 cups cauliflower florets
1 cup Italian seasoned breadcrumbs
1 cup shredded cheddar cheese
2 eggs

Preheat oven to 400 degrees. Boil cauliflower florets until shot. Finely chop with a knife or pulse in a food processor until cauliflower become large, coarse crumbs. Add chopped cauliflower, breadcrumbs, cheese and eggs into a large mixing bowl. Mix until well combined. Shape cauliflower mixture into 1-inch bites and place on a baking sheet. Bake for about 15 minutes or until golden brown on top. Flip and bake another 10 minutes.

To make gluten-free, use our gluten-free breadcrumbs or try using almond flour.
