Breakfast Wonton Cups12 servings
24 wonton wrappers
5 pieces prosciutto
3 Tbsp. cream cheese, softened
6 large eggs
salt and pepper, to taste
green onion, garnish
chopped parsley, garnish

Heat the oven to 350F and spray a muffin tin with non-stick spray. Place two wonton wrappers per cup in the tin. 

Diced up prosciutto into small pieces. Mix together with cream cheese. Spoon the mixture evenly into the wonton cups. 

Break and mix 6 large eggs together seasoning with salt and pepper. Pour egg mixture into wonton cups. *Don't fill all the way to the top as the eggs will puff up in the oven. 

Use residual egg mixture to brush wonton wrappers to prevent burning.

Bake 15-20 minutes until eggs are cooked through. Garnish with chopped green onion and parsley.
