Turkey Meatloaf, 6-8 servings
2 lb. lean ground turkey
3/4 cup oatmeal
1/2 cup skim milk
1 onion, diced
1 red bell pepper, diced
2 eggs
2 tsp. Worcestershire sauce
1/4 cup ketchup
8 oz. tomato sauce

Replace by ground beef in our traditional meatloaf with ground turkey. Instead of using white bread or bread crumbs, add oatmeal. Mix ground turkey and oatmeal with skim milk, diced onion, bell peppers, eggs, Worcestershire sauce, and ketchup. Transfer mixture to a loaf pan and top with tomato sauce. Bake for one hour at 350 degrees.

Cauliflower Mashed Potatoes, 4 servings
1 head cauliflower
1 tsp. minced garlic
1/4 cup plain Greek yogurt
1/4 cup skim milk
1/4 cup Parmesan cheese

Try substituting classic potatoes with mashed cauliflower. Steam 1 head of cauliflower with minced garlic. Add cooked cauliflower, plain Greek yogurt, skim milk and Parmesan cheese to blender and blend until creamy. Season with salt and pepper.
