Bacon Wrapped Dates

dates, pitted
cream cheese
maple syrup, for drizzling

Preheat oven to 375 degrees F.
Cook bacon in the oven on a cookie sheet until just done; about 20 minutes.  Do not overcook. 
Slice dates in half the long way.  
Spoon cream cheese into each date. 
Wrap one half slice of bacon around each filled date, skewer with toothpick. 
Warm slightly before serving; not enough to melt cream cheese.  

Pickled Shrimp

2.5 lbs (16-20 ct) cooked shrimp, peeled & cleaned
1 cup canola oil
¼ cup apple cider vinegar
1 medium yellow onion, small diced
2 teaspoons salt
¾ teaspoon white pepper
2 ¼ teaspoons dried dill 

Add all ingredients (except for the shrimp) into a large bowl and whisk until well combined.
Toss shrimp into mixture and refrigerate overnight.
Drain shrimp before serving cold.


Champagne Raspberry Bellini

1 bottle sparkling wine or sparkling grape juice
1 tub raspberry sorbet
1 package Fresh or frozen raspberries

Scoop sorbet or sherbet into champagne flute
Top with sparkling wine or grape juice
Top with fresh or frozen raspberries

Note-you can make this drink any flavor by changing up the sorbet flavor and garnishing fruit!



Pomegranate juice
Sparkling wine or sparkling grape juice

Pour approximately 2 oz of pom juice into each glass.
Top with sparkling drink


Black Cherry Shirley Temple

1 can black cherries in heavy syrup
1 lime
Black cherry vodka (optional)

Spoon a small amount of black cherries into the bottom of glasses, then top with ice.
Combine Sprite and black cherry juice (drained from can) to the consistency of your liking.
Pour over ice.
Top with 1 oz vodka (optional)
Garnish with lime wedges or more cherries!
