Strawberry Feta Skewers

8 servings
8 whole, fresh strawberries
6 ounces feta cheese
8 mint leaves

Wash strawberries. Slice tops off strawberries and then slice in half lengthwise. Cut feta cheese block into cubes. Take a toothpick and skewer strawberry, mint leave, and feta cheese cube. Repeat until all 8 strawberries are made.

Cranberry Crostini

10-12 servings
1 whole grain baguette, cut into half inch slices
Olive oil
1/4 lb. brie cheese
Cranberry sauce - see homemade recipe below

Preheat oven to broil. Place baguette slices on baking sheet and coat one side with olive oil. Broil for five to ten minutes, or until crispy to make crostini’s.

Remove crostini’sfrom oven. Spread each crostini with brie cheese and top with cranberry sauce.

Homemade Cranberry Sauce
12 ounces fresh cranberries
1/2 cup sugar
2 Tbsp. balsamic vinegar

Preheat oven to 350 degree. In a bowl, mix washed cranberries, sugar and balsamic vinegar together. Lay mixed cranberries on a baking sheet and bake until cranberries pops and juices are exploding.
