Baked Dijon Salmon
, 4 servings
4 – 4 oz. salmon filets
¼ cup olive oil
3 Tbsp. Dijon mustard
1 ½ Tbsp. honey
1 lemon, juiced
¼ cup whole wheat panko bread crumbs
¼ cup pecans, chopped

Preheat oven to 400 degrees. In a small bowl, stir together olive oil, Dijon mustard and honey. In a second bowl, mix together whole wheat Panko bread crumbs, crushed pecans and Italian seasoning. Place each salmon filet on a baking sheet and brush with honey mustard mixture. Sprinkle with bread crumb mixture on top. Bake for 15 minutes.

Roasted Carrots
, 4 servings
12 carrots, cut in half length-wise
3 Tbsp. olive oil
1 ¼ tsp. salt
½ tsp. ground black pepper

Toss cut carrots in olive oil, salt and pepper. Roast in the oven at 400 degrees for 25 minutes, or until tender.
